Fajitas From Scratch
Fajitas are absolutely delicious, but so many people think they require the use of a store’s pre-packaged seasoning mix. They don’t. This fun recipe will make delicious fajitas that will turn you away from the pre-packaged stuff forever.
Easy Fajitas From Scratch
- 2 ounces tequila
- 1/2 cup orange juice
- 1 teaspoon Worcestershire sauce
- Juice from 3 limes
- 1/4 teaspoon Tapatio sauce
- 1/2 teaspoon oregano
- 1/8 teaspoon cayenne pepper
- 1/4 teaspoon paprika
- 1/8 teaspoon black pepper
- 1/8 teaspoon red pepper flakes
- 1-2 pounds steak
- 1 onion
- 2 cups mushrooms
- 1 bell pepper
- 4 tomatoes
- Slice steak and veggies. Combine all ingredients, except tomatoes, into a large bowl and let marinade for an hour to two hours.
- Add the bowl of marinated steak and veggies to a large warm skillet or wok. Heat on medium heat until the onions just barely start to become transparent, then add in the tomatoes. Cook until the tomatoes are soft, but not falling apart, then remove from heat.
- Serve with warm tortillas, cilantro and refried beans.

Make Your Own Lime Infused Gin
Gin and tonic is a classic, but without the twist of lime, the two flavors seem to clash on your taste buds. Rather than hoping you always have fresh lime around when you need it though, try making this simple and delicious infusion instead.
Lime-infused Gin
- 8 limes
- 750 ml gin
- Zest the limes and add the zest into a clean bottle that is large enough for the gin, plus a little extra space.
- Squeeze out the lime juice and add to the bottle, then use a spoon or knife to get all of the fruit meat you can. Add the lime meat to the bottle.
- Pour the gin in the bottle and then store in a cool, dark place for at least a week. Drink within a month so the fresh fruit doesn’t go bad.

Strawberry Amaretto Gelato
It’s almost summer time again, and to get you ready, here’s a deliciously light and refreshing treat that’s still features delightfully complex flavors.
Strawberry Amaretto Gelato
- 2 cups Milk
- 1 cup Heavy Whipping Cream
- 5 large Egg Yolks
- 1 1/4 cup Sugar
- 1/4 teaspoon Salt
- 1 cup sliced Strawberries
- 1/4 cup Amaretto
- Pour 1/4 cup sugar on to sliced strawberries and place in refrigerator for one day so the juices can be drawn out.
- Combine sugar, milk, cream, salt, strawberries and amaretto in a sauce pan and heat on medium, stirring occasionally. When the mixture starts to boil and the top looks frothy, remove from heat.
- While your stove top mixture is cooking, beat egg yolks at medium speed until light and fluffy.
- Turn your mixer to low and slowly add in the milk mixture to the egg yolks. Once everything is blended, turn the mixture up to medium. Stir for about a minute, then put in the refrigerator to cool.
- When the mixture is done cooling, pour it into your ice cream maker and complete the process according to your manufacturer’s instructions.

Dirt Cheap, Quality Easter Egg Dye
Looking to save some money on Easter egg dye this year? Skip the commercial kits and buy a four pack of food coloring instead. Just add 10 drops of food coloring in a small bowl or mug, then add a few tablespoons vinegar and a cup of water. If things seem a little too light, add in a few extra drops of food coloring. You’ll need to make more to dye the eggs whole, but I like to have them only go about half way over the eggs so I can give them stripes. You can change the intensity of the color by leaving them in the dye for longer or shorter amounts of time.
